Aligoté
The second white grape variety of Burgundy, long overshadowed by chardonnay, aligoté is enjoying a fine revival. Crisp, lemony and mineral, it is the quintessential Burgundian everyday white — and the traditional base of the kir.
The aromatic profile
Aligoté plays on freshness: lemon, green apple, white flowers and a touch of hazelnut. Crisp and lively, it relies on tension and drinkability rather than opulence — a frank, thirst-quenching white.
Structure, terroir and table
With pronounced acidity, it produces light wines best drunk young, though old vines on fine terroirs (Bouzeron, in the Côte Chalonnaise, has its own appellation) show real depth. Traditionally blended with blackcurrant liqueur for the kir, it also pairs with shellfish, snails, goat cheese and charcuterie.
