Chardonnay
The world's most famous white grape variety, chardonnay is a chameleon that takes on the character of its terroir and ageing. From mineral Chablis to opulent Montrachet, by way of Champagne, it combines roundness, finesse and great ageing potential.
The aromatic profile
Without oak ageing, chardonnay offers apple, pear, citrus and, on limestone soils, a flinty minerality (Chablis). Aged in barrel, it gains butter, hazelnut, brioche and vanilla. It is an aromatically discreet grape, letting the terroir and the winemaker's hand speak more than itself.
Structure and terroir
With medium to lively acidity depending on climate, it produces full, balanced wines capable of long ageing. It excels on the clay-limestone soils of Burgundy — its homeland — and is one of the three grape varieties of Champagne, where it brings finesse and tension (the "blancs de blancs").
At the table and around the world
Depending on its style, it pairs with fish, shellfish, creamy poultry dishes or cheeses. Planted across the globe — California, Australia, Chile — it is the international white par excellence, from the most vibrant to the most oaked.
